Snacks

Oatmeal Chex Crunch

9 cups Corn, Rice, Wheat, or Chocolate Chex cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 cups instant quarker oatmeal

Into large bowl, measure cereal; set aside.
In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir.
Microwave about 30 seconds longer or until mixture can be stirred smooth.
Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add oatmeal. Seal bag; shake until well coated.

Dinner

Chicken Enchiladas with White Sauce

4 - chicken breast (boneless, skinless)
1 - can -cream of chicken or mushroom
1 - pint -sour cream
2 - 6-8 oz cans -green chiles (peeled and diced)
3 - stalks on green onion (chopped) (optional)
1lb cheese (shredded)
1- package corn tortillas

Preheat oven at 350 degrees.

Boil chicken until shreddable(I usual add lemon pepper in water to season a little). In a bowl mix cream of chicken, sour cream, green chile, and 3/4 of cheese,(green onion optional).
Shred your chicken and put 1/3 in mixture and 2/3 in a seperate bowl.
Take a spoonful of the mixture and coat the bottom of 9x13 glass dish.
Take tortillas lay in oven for 15-30 seconds, then coat with mixture on both sides, put a spoonful of mixture in middle of tortilla, then add desired amount of chicken and fold and place in pan.
After enchiladas are all rolled, cover with remaining mixture and remaining cheese then bake for 20min or until until cheese melted and warm.
